Apicius Culinary Institute of Florence presents the flavors of southern Tuscany, the little known Maremma to be exact, in New York City. For the fifth consecutive year Apicius chefs, current and former students will host a gala dinner and hands on workshop at the James Beard House in Manhattan, New York. Among the main highlights of the event are featured: the presentation of a new book on Maremma produced by FUA students, an evocative menu bursting with the magic and mystery that is Maremma, Maremman wines cultivated according to planetary and lunar calendars, and an entire team of Apicius chefs and sommeliers supported by current and former students whose goal is to continue the traditional yet innovative approach to educating the American palate on the true flavors of Tuscany. The formal dinner for 80 guests will be held on October 23rd while a more intimate, hands-on workshpo is scheduled for 25 participants on October 25.
